Corpus dough. 1,75cups of soft flour, 140g of vegetarian butter, 2 spoons of water.

Filling. 1 cup of chickpeas flour, 1 cup of water, 1 small onion, half a cup of cut red pepper, half a cup of cut yellow pepper, half a cup of cut zucchini, half a cup of aubergine.

First prepare the corpus dough. Put the flour into a bowl and add vegetarian butter. Make the dough.When it is ready, add the water and process the dough again. Wrap the dough into the foil and leave it in a fridge for 30 min.

Cut the onion and fry it on oil until it gets gold colour. Add pepper, zucchini and aubergine and fry them for a short time.

In a bowl mix chickpeas flour and spices. Mix them and add the water. Mix it again and put the ready dough mixture into the pot, in which it should be boiled on the middle flame for 12 min or until it gets thick.Mix the dough with the vegetables.Take the corpus dough out of the fridge. Put some flour on the kitchen table and shape the dough according to the demanded size. Put it into the baking form with 27cm diameter. Pierce the dough with a fork. Cover the dough in the form with baking paper and put some beans on the top of it. Put it into the pre- warmed aven at 175 degrees C and leave it there for 15 min. After 15 min. Remove the beans and baking paper from the dough and leave the dough in the oven for 5 more min. After that put inside the vegetable filling and bake for the next 25min.

When Quiche is ready, put some grated cheese on it and put it back into the oven for 5 more min. Serve quiche as a piece or with salad.
