Ingredients
1 package Tudlee Creamy Tomato-Basil
1 can of tomatoes
eggplant (1 cup cut into cubes)
1 onion
3 cloves garlic
1 and 1/2 tbsp basil
1 tsp salt
1/2 tsp black pepper
200 g penne (gluten free)
Instructions
Cut the eggplant into cubes and finely dice the onion. In a medium skillet, add a little bit of olive oil. Once heated, sauté the onion and minced garlic. Add in the eggplant, let sauté for five minutes, then add in tomatoes, black pepper, salt and basil. Let it cook for a few more minutes and add in Tudlee Creamy. Wait till the cheese melts, take the sauce off the stove and set it to the side. Add in cooked penne and mix the sauce in. You can serve this pasta dish with Tudlee cheese!
